No Knead Rolls

I'll admit it usually we buy prepackaged rolls that we only have to pop in the oven for a few minutes right before dinner. Although these rolls require a little planning ahead they are very easy to make and are wonderful when you want to make dinner a little more special or for holidays. Considering giving these a try for Thanksgiving dinner.

Ingredients: 9 cups Flour
1 cup Sugar
4 cups Milk
1 cup Vegetable Oil
2 tablespoons Salt
1 teaspoon Baking Powder
1 teaspoon Baking Soda
2 packages Active Dry Yeast

Directions:

1. Combine milk, sugar, oil in a huge pot or dutch oven. Stir. 2. Turn the burner on medium to medium-low and “scald” the mixture, which means heat it up just until the point that it would boil. 3. Walk away from the mixture and allow it to cool until it is lukewarm.
4. Stir in 4 cups of flour. Then sprinkle in 2 packages (or 4 1/2 teaspoons) Active Dry Yeast. Stir.
5. Add in an additional 4 cups of flour.
6. Leave the mixture sitting ont he stove where it is warm. Cover it with a tea towel and walk away. After about an hour the mixture should be puffed up to look like this. 7. Hit it down a couple times with a big spoon. Then stire in another cup of flour, a heaping teaspoon of baking powder, a less than level teaspoon of baking soda, and 2 tablespoons of salt. Stir. 8. Butter cupcake pans very well. 9. Place 3 slightly less than walnut size balls inside each cupcake tin. 10. Again leaving the rolls somewhere warm allow them time to rise. We gave ours about an hour but they could have used another half hour or so. 11. Bake the rolls at 400 for about 12-15 minutes. These were so delicious, especially when they were warm with some butter. This recipe is supposed to make 24 rolls but we ended up with about 48, so you may want to consider cutting the ingredients in half if you are not making food for a large group.
